Aubergine Violetta Lunga

Aubergine Violetta Lunga, a classic purple aubergine; how I love you.  You make my favourite Baba Ganoush dish. You crop up in the oh so lovely and rich pepper, tomato and smoked paprika dish I consider one of my staples. You sneak into lasagne when no-one is looking.  You soak up flavours. You certainly soak up olive oil. You are summer. You are holidays. You are views of Spanish mountains.  That is my ode to an aubergine.

This is the classic Italian eggplant typically used in the Emilia Romagna region to make ‘Parmigiana’ with tomatoes and Parmesan cheese. This is a mid-early variety, very productive. It produces a long, dark and slightly curved aubergine of medium dimensions with very few seeds inside.
